What was once just a seedling of an idea has blossomed into the Omni Amelia Island Resort’s newest offering. “The Sprouting Project” consists of a state-of-the-art aquaponic greenhouse, an expansive organic garden, a large collection of beehives, a barrel room.

Truffle Weekend

Truffle season is coming, and Omni Amelia Island Resort is going all out spotlighting this decadent delicacy at all of its restaurants and lounges. This Truffle Weekend takeover will be celebrated December 15-17, 2023 when adventurous foodies can indulge in a variety of dishes incorporating this flavorful fungi. Reserve a seat at The Sprouting Project dinner, available each night during the weekend and enjoy an artfully crafted, five-course truffle focused dinner. The truffle doesn’t stop there as you can experience a variety of truffle creations offered exclusively during the weekend at many of our restaurants! We highly recommend making reservations in advance to enjoy all the flavors these truffles have to offer.

Guests will enjoy an intimate southern-inspired true farm-to-table dinner at The Sprouting Project, our culinary team’s answer to hyper-local sustainability.
The dinner includes a tour of the resort's state-of-the-art aquaponic greenhouse, expansive organic gardens, the barrel room and large collection of beehives while enjoying passed bites and harvest inspired cocktails, all before a five-course chef inspired dinner that incorporates items gathered directly from The Sprouting Project.
This monthly event will showcase both the creativity and culture of our chefs in a lush, outdoor setting. February theme: Cocoa. 6 p.m. Reception with cocktails and light bites 6:30 p.m. Dinner. Cash bar.
